Provolone con peperoni “cruschi”
Provolone con peperoni “cruschi” (with dried red peppers) is a Basilicata region speciality, where the provolone, made according handmade methods handed down by dairy artisans, marries with an other Basilicata region excellence, that is “peperoni cruschi”(dried red peppers) so as to create a product unique in its category and of incomparable colours and flavours. “Peperoni cuschi” represent a Basilicata kitchen speciality. As the main winter preserves, peppers are wisely arranged one next to each other to create the typical series, thanks to a cotton yarn that links them from the stalk, and later they dry under the Basilicata sun.
It is characterised by a spherical shape, with a thin, smooth and uniform rind whose colour goes from straw yellow to intense yellow.
Perfect as table dairy product or in side dishes and starters composition.
