Fior di latte
Mozzarella is the most important and well-known representative of spun paste (pasta filata) cheeses, produced and appreciated in Italy and all over the world.
The etymology of the word “mozzarella” derives from the verb “mozzare”, that means cutting by hands a little piece from the long string which is formed.
Mozzarella known as Fior di latte is a fresh cheese, characterised by a white colour and a soft, smooth and shiny surface. Its paste is compact and stringy; its flavour is sweet and mild.
It can be eaten alone or with vegetables and a lot of foods.
